Since you were being put in a potential choke hold and couldn't breath due to your face being in the mud you could easily say you panicked just like people who drown do. Being you couldn't breath it is the natural fight or flight response. Still biting is obviously frowned on but I would bit if in a similar situation. Since you stood up to them you may have their and others respect now. They have grown up in a bad situation and bully others to make themselves feel better.
On another note in my state someone is allowed to use deadly force if they are being raped. Granted you were not being raped but your life could have been in danger. Not sure how your laws are. In your case you were best to take the punishment and not fight it.
